So I was talking to my man Gus - sometimes called "The Argentinian," sometimes called "El Gustavo Supremo con Queso y Frijoles" which means "The Supreme Gus with Cheese and Beans" - about things we might add to our winter menu. He suggested Cuban sandwiches. The man is a Genius!
A Cuban is a wonderful sandwich made with roast pork, ham, swiss cheese and pickles that is then pressed and grilled. And since we'll be making roast pork anyway...
Now one thing concerned me a little - we make Italian roast pork with lots of Italian herbs and spices and I was concerned that might not work out so well. Now we finish our Italian pork in its own jus, which has a concentration of those flavors. So I figured if we finish the pork in a nice garlicy, citrusy Mojo sauce, well that might just bring us back around to little Havana. WoooHooo!!
So, I'm thinking one of those nice Hearth Bakers 12 inch rolls stuffed with 3/4 lb of ham and roast pork with mojo, plus swiss cheese and pickles, pressed and grilled. Add a large side of fries and you may well have dinner for two. Did I just say fries? Why yes, yes I did...
